How did I miss this? I was scrolling through my Facebook feed the other day and stumbled on, what looks to be a summertime gem. The story illustrated how to make sweet corn in an Igloo Cooler. They call it Cooler Corn.

I was a bit skeptical at first, but after I gave it some thought it sounded like it might be a good idea. Then, after I watched a couple of videos on this interesting process of cooking corn, I was intrigued and thought I might give it a try.

All you do is peel the corn, put it in the bottom of the cooler, cover the corn with boiling water, shut the lid, and wait for 30 minutes. The best news, that corn stays warm and ready to eat for up to 2 hours after!

Now, for the most part, it's just my wife and me, so I thought I would try it in a 'small igloo cooler.' You know what? It works just fine. Oh sure, I still had to 'warm up the house' a bit, a result of boiling water on the stove, but it worked!

Most of the information I've read on cooler corn comes from outdoor enthusiasts looking to bring a little gourmet cooking to their outdoor get-togethers.  The best part is you could start the process up to 2 1/2 hours before mealtime. Yep, more time to pay attention to the main entree.
